Brewing Science: How Preparation Method Determines Your Beverage’s Nutritional Profile

The health benefits of your daily cup depend far more on how you prepare it than on which beverage you choose. Research published in the Journal of Agricultural and Food Chemistry reveals that steeping time, temperature, roasting level, and processing method fundamentally alter the concentration of bioactive compounds in tea, coffee, matcha, cacao, and yerba mate.

Light roast coffee contains 3.3 times more chlorogenic acid than dark roast—a direct result of heat exposure degrading polyphenols during the roasting process. Similarly, tea catechins reach peak concentration after just 3–5 minutes of steeping; prolonged steeping shifts the chemical profile toward tannins instead. Matcha delivers three times more EGCG than steeped tea because consumers ingest the entire leaf. Even cocoa processing matters critically: alkalisation destroys up to 90% of flavanols, reducing natural cocoa’s antioxidant capacity substantially.

Understanding these chemical transformations empowers informed dietary choices.
