A single number tells a compelling story about coffee and heart health: 5.4 mg/dL. This is the average increase in LDL cholesterol associated with unfiltered coffee consumption, according to recent meta-analyses of randomized controlled trials. But here’s the critical detail—this rise occurs only with metal filters.

Diterpenes, the cholesterol-raising compounds in coffee oil, pass freely through metal mesh filters used in French presses and espresso machines. Paper filters, by contrast, trap these lipid-soluble compounds almost completely, reducing diterpene concentration from approximately 800 mg/L in French press coffee to near-zero levels in filtered drip coffee.

For individuals managing cholesterol levels, the choice is straightforward: paper-filtered brewing methods eliminate the cardiovascular concern without requiring coffee abstinence. The evidence from 26+ randomized controlled trials confirms this protective effect across diverse populations.
