A landmark study from UC Davis researchers has challenged decades of nutritional orthodoxy, revealing that frozen produce can match or exceed fresh alternatives in key vitamin retention. The comprehensive analysis examined eight common vegetables and fruits—including corn, carrots, broccoli, spinach, peas, green beans, strawberries, and blueberries—measuring levels of vitamin C, vitamin E, riboflavin, and beta-carotene under controlled storage conditions.

The findings underscore a critical advantage of frozen produce: rapid processing at peak harvest locks in nutritional value before degradation occurs. For vitamin C and E specifically, frozen samples demonstrated superior or equivalent levels across all tested commodities, with three out of eight items showing measurably higher vitamin concentrations than their fresh counterparts. This research suggests that freezing technology, when applied immediately after harvest, provides a scientifically validated method for nutrient preservation that rivals traditional fresh produce storage.
