A comprehensive analysis of nutrient retention across produce processing methods reveals that frozen and canned fruits and vegetables preserve vitamins, minerals, and dietary fibre at levels comparable to fresh options. This finding challenges persistent misconceptions that only fresh produce delivers meaningful health benefits.

The research demonstrates that rapid processing—typically within hours of harvest—effectively locks in nutritional quality before oxidative degradation occurs. For populations facing cost and accessibility barriers to fresh produce, this evidence offers reassurance that frozen and canned alternatives represent nutritionally sound choices for meeting WHO dietary recommendations of 400 grams daily consumption.

Expert analysis suggests that expanding awareness of frozen and canned produce equivalence could significantly improve dietary intake across populations with limited access to fresh options.
