The Numbers Don’t Lie: Why Your Bread Affects You Differently

The data is striking. When 800 adults consumed the same 50-gram portion of white bread under controlled conditions, their glucose responses ranged from 15 to 79 mg/dL·h—a 5.3-fold difference. This variability cannot be attributed to weight or baseline blood sugar levels alone.

The 2015 Weizmann Institute study identified multiple independent predictors of individual glucose spikes: microbiome composition, sleep duration the night before testing, and the timing and composition of previously consumed meals all significantly influenced metabolic response. Standard clinical variables accounted for only a fraction of the observed variation, suggesting that personalized assessment is essential for accurate metabolic prediction.
