What Plant-Based Eaters Need to Know: Quality Trumps Processing

New evidence from a major 28-year study offers practical guidance for individuals adopting plant-based diets: focus on nutritional quality rather than obsessing over processing levels. The research, involving 126,842 health professionals, identified three critical principles for plant-based eating success. First, prioritizing whole plant foods with high nutritional value reduces mortality risk by 13 percent. Second, processed plant-based foods need not negate these benefits if they remain part of an overall high-quality diet. Third, avoiding unhealthful plant-based options—refined grains, sugary drinks, and processed sweets—is essential, as such choices increase health risks even when minimally processed. The study’s findings, published in The Lancet Regional Health, suggest that dietary success depends less on avoiding food processing and more on making nutritionally sound choices within all categories of plant-based foods.
