A comprehensive prospective cohort study of 39,498 older adults has challenged decades of dietary caution surrounding egg consumption, revealing a significant protective association with Alzheimer’s disease prevention. Researchers from Loma Linda University tracked participants over 15.3 years, documenting 2,858 Alzheimer’s cases and establishing a clear dose-response relationship: those consuming eggs five or more times weekly demonstrated a 27% lower Alzheimer’s incidence compared to never-eaters.
The protective mechanism appears rooted in choline, a nutrient concentrated in eggs that serves as the precursor for acetylcholine, a neurotransmitter critically depleted in Alzheimer’s pathology. A single large egg provides approximately one-third of the daily choline requirement. Beyond choline, eggs contain lutein, zeaxanthin, and phospholipid-form DHA—compounds capable of crossing the blood-brain barrier to support cognitive function.
